These can be an inexpensive way to get protein and omega-3 and last longer than fresh varieties. Check your pantry, refrigerator and freezer. Look at the expiry dates of the foods and ingredients you already have on hand. Which ones do you need to use up?

Look for recipes that use those foods and ingredients. Enjoy grains more often. Grains such as rice, pasta, barley and couscous are inexpensive and can be used in many different recipes. Try them in soups, stews and salads such as Lentil Bolognese and Curry Chickpea Pasta Salad.

Avoid recipes that need a special ingredient. Some recipes call for a special ingredient that you may not have. How much does that ingredient cost?

Does it come in a small or big package? I love the ease of this 5 ingredient recipe! Just cook up a box of pasta and throw in some cooked chicken, cooked broccoli, ranch dressing, and parmesan cheese.

Toss and serve warm or cold. Make some yummy omelets with eggs, bell peppers, sausage, and cheese and serve with toasted French bread on the side.

The best sharp paring knife. The grocery prices listed below are from my local Aldi and Walmart, though I often find similar prices and sales at my other favorite grocery store, Kroger.

Hard-boiled eggs add protein to your morning avocado toast or your kid's lunchbox. Canned tuna becomes an easy meal-prep filling for lunch wraps and doubles as melts for a quick dinner. When shopping, keep an eye out for deals and stock up when stuff goes on sale.

Pound for pound, plant-based proteins like lentils and canned beans are a steal compared to animal proteins. Plus, research suggests that eating more plants is good for our health. Add in a few meatless options throughout the week for breakfast, lunch, dinner and snacks. Assigning theme-night meals based on different meal types—like Slow-Cooker Sunday, Meatless Monday or Stir-Fry Friday—or based on pantry staples like brown rice and whole-grain pasta think Rice Bowl Thursday or Pasta Wednesday is a good way to stick to your budget and also reduce meal-planning decision fatigue.

To minimize food waste and save on groceries, I'll use many of the same ingredients for multiple meals. Planning simple, quick breakfasts I can serve in minutes is key to less-chaotic mornings in our house.

I'll meal-prep a big batch of overnight oats to be eaten on demand during the week or packed up to-go. Or, I'll toast a stack of whole-wheat bread and let everyone choose their toppings.

The only ones I did not include were olive oil and spices. All three of my kids are home right now for summer break, so anything I prepare, I have to do in between taking care of them. I also had an appointment coming up one afternoon this week, meaning I wouldn't be home to prep dinner as usual.

So I knew I had to be extra strategic about stretching leftovers. When I usually schedule my delivery, I'm able to select a morning or afternoon slot. But this week, the earliest delivery time available was later in the evening. To accommodate that time crunch, I made a change to tonight's recipe selection and bumped up a different faster-to-make dinner from later in the week.

Recipe: Enchilada Stuffed Shells I Shop The Recipe. This part was a little more time consuming than I had anticipated, but overall this recipe still came together quickly. For some reason, I ended up having extra shells, so I decided to throw them on the side and make a few plain ones in case the kids preferred them that way.

I always empty my dishwasher first thing in the morning so that I can put my dirty dishes directly into it throughout the day. This means that I'm not left with a huge stack at the end of the day.

This recipe turned out really well, and I would make this again. However, even though I bought mild enchilada sauce, it was still a bit spicy for the kids.

Next time I would try a different sauce or maybe salsa to help make it a little more family-friendly. My son especially loved these and kept asking for more! He ended up eating two full-size pockets — and we still had leftovers. Keeping it real! Plus, everyone was still pretty full from the big breakfast we had, and the kids were eager to spend time at the neighborhood pool.

One oversight I made was that I didn't have a wooden skewer. I ended up using toothpicks. This strategy worked out OK, although it ended up falling over in the oven thankfully still on the baking sheet! The recipe says to cook the chicken for 1.

I automatically set my timer for 2 hours and didn't check it again. Next time I would make sure to keep a close eye on it because at the 2-hour mark, my chicken was a bit overcooked.

Going into this recipe , I was worried that the kids wouldn't like the plain cream cheese. But to my surprise, these ended up being pretty sweet.
